Vinification Process: In September, the grapes are dried for 120 days and up to a 43% loss from their initial weight; they are then subsequently soft-pressed. Maceration on the skins lasts for 24-25 days at 64.4° F.
Aging Process: Barrique-aged for 24 months, followed by bottle aging for one year.
