Vinification Process: Once de-stemmed and pressed, the grapes ferment and macerate for 12-14 days in temperature-controlled steel tanks (25-28 °C). During this period, frequent pumpovers take place, favoring the release of noble tannins into the wine, something bush-trained Carignano is particularly known for.
Aging Process: After malolactic fermentation, the wine is racked into small, fine-grain, French oak barrels of first or second use for about 10-12 months. During this time, they go through biochemical, chemical-physical and organoleptic evolution. After which wine bottle ages six months. The contact with glass allows for the early development of the bouquet.
