Soil: Volcanic soil rich in clay, calcium, nitrogen and tuff. Calcareous clay soil with medium texture

Vine density: 1,800-4,000 vines per hectare
Winemaking Information
Total Production: 2,000 bottles
Vinification Process: The grapes are harvested by hand when they’re perfectly ripe and are vinified separately to best respect the peculiarities of the individual varieties. After soft crushing, the grapes undergo cold maceration for 12 hours. Immediately after, the grapes are pressed. Pecorino ferments in large unroasted 50hl barrels while Fiano and Grillo ferment in stainless steel at temperatures of 10-12 °C.
Aging Process: In stainless steel and in bottle.
