Winemaking Information
Total Production: 100,000 bottles
Vinification Process: The grapes are harvested by hand and then pressed, destemmed and cooled rapidly to -1 °C in an inert atmosphere. Static clarification of the must. followed by fermentation at 12 °C to extract as much aromatics as possibile. 80% of the juice is fermented in stainless-steel tanks, the other 20% in 40hL oak barrels.
Aging Process: In stainless steel and in bottle.
