Winemaking Information
Vinification Process: After selection on the shorting table grapes where softly de-stemmed and gently crushed, then cold macerated for three days in stainless steel tanks before inoculation of the fermentation with selected yeast. Tanks with pistons on top are used for punching down the cap in order to have better color and tannins extractions. After full malolactic the wine was barrel aged for 12 months in new American oak barrels made from a French company before finishing and bottling.
Aging Process: The wine undergoes 12 months in American oak barrels.
