Winemaking Information
Total Production: 9,000 bottles
Vinification Process: The best grapes are selected in the vineyard, hand-picked and placed in small baskets and crates. After destemming and soft pressing, the grapes ferment in small oaks or stainless-steel vats, 2/3 full. Fermentation lasts about a week at a temperature of 82.4-86 °F, followed by 5-8 days’ maceration and malolactic fermentation.
Aging Process: The wine is racked into Allier and Slavonian oak barrels (350-liter to 4-hl.) of for 28-32 months.
