Winemaking Information
Total Production: 5,000 bottles
Vinification Process: Grapes are harvested by hand, and soft-pressed whole. The fruit is fermented at a controlled temperature in stainless steel tanks, and in new Allier oak barriques and tonneaux that medium-toasted. The latter grapes undergo 24 hours of cryomaceration at 46.4° F previous to pressing and fermentation.
Aging Process: The wine ages sur lie and in the barrriques and tonneaux until March when they are blended.
